How to Create Stunning Sugar Roses: A Step-by-Step Guide

Hello cake enthusiasts! Welcome to today’s tutorial where we delve into the art of creating beautiful sugar roses. Whether you’re a beginner or a seasoned cake decorator, mastering the craft of sugar roses can elevate your cake designs to a whole new level.


Today, we’ll be focusing on how to complete a rose bud and add the large final row of sugar petals to your rose. We'll walk you through the essential tools and steps needed to create these stunning decorations.


Tools You’ll Need

To create a sugar rose, you’ll need the following tools:

- Sugar paste (we’ve coloured ours pink)

- Petal and calyx cutters

- Rolling mat with grooves and rolling pin

- Foam sponge

- Cocktail stick

- Veiner

- Wires

- Edible glue

- Paintbrush

- Florist tape

- Dusting colors



Step-by-Step Guide to Making Sugar Roses


Step 1: Rolling and Cutting Petals

Start by rolling out your sugar paste on the grooved side of the board. Cut out 7 petals for the outer row of wired petals. Apply a small amount of edible glue to the wire before inserting it into the thicker grooved section of the petal. This ensures the petal sticks to the wire securely.


Step 2: Shaping the Petals

Thin the edge of each petal using the end of your rolling pin. Flip the petal over and gently roll the top edges with a cocktail stick. Place the petals onto a flower-forming tray to dry. An apple tray can work just as well.


Step 3: Drying the Petals

The wired petals need to dry for 30 minutes to overnight, depending on your sugar paste recipe and weather conditions. Step 4: Adding the Petals to the Rose

Once the petals are dry, add them to your rose, which should already have several petals attached. Follow the sequence: single petal, then 2, 3, 4, and 5 petals, each following the same process. These should have been added the day before and left to dry overnight.


Step 5: Completing the Rose Bud

For a smaller rose bud, add a single petal followed by two petals. Secure the calyx at the base with edible glue, cover the wire with florist tape, and add a small ball of fondant to the base of the calyx. Position the calyx over any gaps in the petals if present.


Step 6: Assembling the Full Rose

Take your pre-made rose and add floral tape to the wire stem. Gently bend the petals back on the wire so they sit perfectly onto the previous rose petals. Add the petals in an upside-down position to see the even placement more easily. Ensure each petal overlaps the next and secure each wire with florist tape in between adding them.


Step 7: Final Adjustments and Drying

Turn your rose upright and gently position the petals. Place the rose on a drying rack overnight, supporting the petals with paper napkins underneath and in between to add shape and volume. Allow the flower to dry completely.


Step 8: Adding Colour

Using a soft brush, gently apply deeper pink dust to the edges of the petals and slightly more to the inner petals. Start slowly and lightly, as it’s easier to add more colour than to remove it. Remember, the petals are fragile, so handle them with care. We recommend making an extra 2-3 petals in case of breakage.
